This experimental mixed culture was first fermented in Tattersall Blackstrap Rum Barrels then transferred into Reposado Tequila Barrels with Plums. The end result is lovely complex flavors or dark cherry, dark plum, and deep notes of dark chocolate with a funky tart finish.
